Mini Key Lime Pies
Ingredients:
6 1/2 pint mason jars
2 cups graham cracker crumbs
3 tablespoons sugar
5 tablespoons butter, melted
3 eggs
1/2 cup key lime juice
1 (14 ounce) can sweetened condensed milk
1 pinch salt
1 pinch cream of tartar
1 cup heavy whipping cream
1 lime, sliced
Directions:
Preheat oven to 325 degrees. Mix graham cracker crumbs with sugar and melted butter. Put graham cracker mixture into each mason jar and fill to about 1/3 of jar. Bake for 5 minutes. Take one whole egg, 2 egg yolks, lime juice and sweetened condensed milk and mix together. Mix in salt and cream of tartar and addd to mixing bowl. Beat or use mixer until filling has stiffened. Pour filling into partially baked crust. Bake again for another 10 to 15 minutes or until set. Let cool at room temperature and then freeze for 3 to 4 hours. Before serving, whip cream by taking heavy cream, a pinch of sugar and a drop of vanilla extract to a mixer until thickened. Serve decorated with whipped cream and lime slices.
